Soba noodles are made from buckwheat which is actually a seed, and not wheat at all so it’s gluten free! To make this 100% gluten free, all you have to do is sub out regular organic soy sauce with gluten free soy sauce, tamari, or liquid aminos.
For the peanut sauce, make sure you use an organic peanut butter and the flavor will be just NUTS! It’s one of my original creations and absolutely delicious! You’re going to want to smother this on everything!
You can toss whatever fresh veggies in with the noodles and dressing but I like the ones I did because of the different colors… so pretty, and the variety increases nutritional content.
Cold soba noodles are amazing in the summer time and this dish can be served as an appetizer or a main. This is a crave-a-licious dish that is light and simple and a snap to make. You’re welcome!
